The easiest way I've found to COB is shown in this video. (Thanks to Natalie J. for teaching me).
In some instances the background may need to be removed with more precise tools like using the Refine Edge brush as a way of more accurately selecting hair and fur.
In addition, the teacher demonstrates some of the selection tools in photoshop including the lasso tool, quick select tool, magic wand, and others.
Quickmask Mode is demonstrated along with the use of a Layer Mask made from a selection and feathering a selection.

Students are to use a photo that they have taken and isolate the main subject of the photo by using selection tools in photoshop. Students are to remove the background and save the image as a .PNG with transparency so their image could be placed over another image or in another setting.
Be sure to crop the image tightly to the visible object.
Evaluation:
4 points -- Quality of original photo
4 points -- Clean natural masking/cutting
2 points -- Saved as a PNG file with transparency
10 Points total.
