American Bakery Expo presents the Frozen Dessert Pavilion


American Bakery Expo and RBA, in conjunction with Frozen Dessert Magazine, are pleased to present the first Frozen Dessert Pavilion. The aim of this exhibition area is to introduce the retail baking industry to the manufacturers and distributors in the frozen dessert industry to expand their operations in a meaningful and synergistic manner.

Sticky Fingers Bakery Wins Local Award and is Featured on the Food Network


Washington, DC-based Sticky Fingers Bakery recently was awarded the "Best Bakery in DC" award by W* USA channel 9. The competition, which the channel sponsors every summer, allows consumers to determine the best local businesses. This year, over 55,000 total votes were cast.

Additionally, Sticky Fingers was also featured on The Food Network program "Road Tested". The show features Jamie and Bobby Deen (sons of Paula Deen) as they travel the country in search of the best local, hand-crafted foods. The episode will premier on The Food Network on October 3rd at 10:00pm (eastern & pacific). For more information and additional air times,

Cupcakes for a Cause Begins October 16th


CancerCare would like to invite RBA members to participate in Cupcakes for a Cause™, which will be held from October 16 to October 22, 2006. This fun and exciting event benefits the CancerCare for Kids® program, which provides free support services to children affected by cancer and their families.

During the week of October 16 to October 22, participating stores and wholesalers will sell their cupcakes and with the CancerCare for Kids logo and donate a portion of their proceeds to the CancerCare for Kids program. Bakeries can either create the logo out of their own orange icing or request candies in the shape of the logo from CancerCare. Participating bakeries will receive promotional material from CancerCare.

Join Us for the Celebrate RBA and National Bread & Pastry Championship Banquet


Attending American Bakery Expo? Then plan on joining us at the Celebrate RBA and 2006 National Bread & Pastry Championship banquet during American Bakery Expo. The banquet will be on Sunday, October 22 at 7:00 pm at the Tropicana Casino and Resort. During the banquet we will honor the Pillsbury Grand Champion from the Creative Decorating Competition, the National Bread & Pastry Champions and individuals that have achieved Certified Decorator, Certified Baker or Certified Master Baker status. CSM Renames Merged Entities


CSM Bakery Supplies North America recently announced that as of January 1, 2007, recently merged Caravan Products and American Ingredients will be named Caravan Ingredients. The merger, which was originally announced back in May, will allow for both companies to keep their full lines of products but will be branded with the new company name. The company's headquarters will be in Kansas City , MO ; but will operate manufacturing facilities in both Kansas City and Totowa , NJ .

 


Report Shows Growth in US Food
Emulsifier Market


According to a recently published Frost & Sullivan Report, "Strategic Analysis of U.S. Food Emulsifiers Markets", the application of modern food processing techniques and new product development across diverse segments such as bakery and confectionery, as well as fats and oils are spurring the use of emulsifiers. Food emulsifiers reduce interfacial tension, allow rapid absorption at the interface area, improve the functional efficacy in case of low concentration, resist chemical changes, scale economies of production and improve the shelf life and organoleptic attributes of baked goods and ingredients.

But for all their potential, emulsifiers also face a mounting threat of being replaced by enzymes, especially in the bakery sector. Enzymes are chosen over emulsifiers for their superior crumb softness, volume, shelf life and capabilities as processing aids.
